Kathiri Vathal is sun-dried small brinjal (eggplant) — one of the most essential vathal varieties in Tamil Nadu cooking. Deep fried until crispy and golden, or added to Vathal Kuzhambu, it develops a rich, concentrated umami flavour completely different from fresh brinjal. No preservatives, no artificial colour, traditionally sun-dried.
