Nattu Mattu Nei (Country Ghee) is pure clarified butter made from the milk of indigenous Tamil Nadu breed cows (Nattu Mattu) — A2 milk cows whose ghee is fundamentally different from ghee made from hybrid or crossbred cattle. Slower to make, richer in flavour, and containing the natural A2 beta-casein protein associated with better digestibility and superior nutrition. Deep golden, intensely aromatic, and prepared using the traditional bilona (hand-churning) method.
