Surul Pattai (Cassia Bark) is the thicker, more intensely flavoured bark from the Cinnamomum cassia tree — widely used in South Indian biryani and masala preparations for its bold, warm spice. Different from Sri Lankan true cinnamon, Cassia has a stronger, more assertive flavour and is the standard bark used in most Indian cooking. Chemical-free and naturally sourced.
