Vadu Mangai Vathal is sun-dried baby raw mango — intensely sour, tangy, and deeply aromatic. Added to Vathal Kuzhambu and rice dishes for a sharp mango souring that is completely different from tamarind. Also served as a tangy pickle-like accompaniment. Traditionally prepared without preservatives, naturally sun-dried during peak mango season.
